Sheva Star's Banana Birthday Cake

Today is my dear niece's birthday. Sheva Star is 2 years old!! We celebrated it last week since she would not be with us on her actual birthday. So, Bit-Auntie made a Chocolate-Marble Banana cake! It was a joint cake for her and her daddy's birthday.

This pic is from Christmas morning. Sheva is wearing the oh -so- tacky hair extension we got her.
What You Need:
-In addition to the marble cake mix (or yellow is good too) and whatever the directions call for(eggs, water, oil)
-3 Very ripe bananas (whenever your bananas get too ripe, just peel them and store them in the freezer for such an occasion)
-1 tsp baking soda
For the Icing:
-3 1/2 c. Powdered sugar
-1/2 c. Cocoa
-8 tbsp milk
-2 tbsp light butter, softened
-1 oz bittersweet chocolate, melted
-1 tsp vanilla
-Follow the cake's directions for the yellow part and for the cocoa/marble part. (It comes with a cocoa packet.)

-Blend the 3 bananas in a blender and mix in the 1 tsp baking soda. Then add to the yellow mix.
Pour the yellow/banana mix into two pans. Then drop choc/marble mixture by spoonfuls into the yellow mix.


Simply swirl the chocolate spoonfuls throughout the yellow mix.


Bake at 350 for 35-45 minutes and stick a knife in to make sure it's done...so that there is a nice hole in your cake. As your cakes cool, make the chocolate icing.

 "5 Minute Low-fat chocolate Frosting," via America's Test Kitchen Healthy Cookbook:
In blender or food processor, combine powdered sugar and cocoa. Then add milk, butter, melted chocolate and vanilla. Mix until smooth.



Once the cakes have cooled...Frost the inside of the cakes, as well as the entire thing.
Just a thought- if you make icing to decorate, make it extra thick so that it comes out of the icing dispenser firm, and not runny...

One more hair extension pic...The watch she is wearing has lip gloss inside that she was devouring, so we had to take it away. Toys say, "For kids 3+," for a reason!!
