Props to my husband's artistic food-making skills. Veggie burgers w/ red pepper, habanero, cheese & lettuce. And, of course, cheesy mashed cauliflower on the side. |
What Ye Need:
- 8 cups bite-size cauliflower florets (about 1 head)
- 4 cloves (2 tsps) crushed garlic
- 1/3 cup skim milk
- 2 teaspoon butter
- 1/2 teaspoon salt
- Freshly ground pepper to taste
- Grated parmesan cheese (optional)
***For a creamier texture & taste to your potatoes/cauliflower, my mom always used a couple dollops of fat-free mayonnaise, but if that grosses you out, as sure as Bit Joy is probably gagging, then you could also use 2 dollops of sour cream or greek yogurt.

Mash it all before putting it in the food processor. The food processor will make it real creamy-like. If you don't need "creamy" to fool you into thinking mashed potatoes, than forget the food processor and enjoy it's lumpiness.
