Mashed Cauliflower

Everyone's all about staying on guard during the holiday season to keep those extra lbs from creeping up & attaching to your boootay.. How about a dish with way less carbs, you ask?? No mashed potatos this year?? No worries, because if you have a food processor, no one will detect your top-secret veggie swap this Thanksgiving. And if you don't have a food processor, maybe a certain loved one will add that to their gift list for ye...

Props to my husband's artistic food-making skills. Veggie burgers w/ red pepper, habanero, cheese & lettuce. And, of course, cheesy mashed cauliflower on the side.
What Ye Need:
  • 8 cups bite-size cauliflower florets (about 1 head)
  • 4 cloves (2 tsps) crushed garlic
  • 1/3 cup skim milk 
  • 2 teaspoon butter
  • 1/2 teaspoon salt
  • Freshly ground pepper to taste
  • Grated parmesan cheese (optional)
***For a creamier texture & taste to your potatoes/cauliflower, my mom always used a couple dollops of fat-free mayonnaise, but if that grosses you out, as sure as Bit Joy is probably gagging, then you could also use 2 dollops of sour cream or greek yogurt.

Chop it..
Boil it...

Prepare your ingredients...

Mix them...
Mash it all before putting it in the food processor. The food processor will make it real creamy-like. If you don't need "creamy" to fool you into thinking mashed potatoes, than forget the food processor and enjoy it's lumpiness.
