Shepherd's Pie & Pomegranate Wine

My husband bought us wine for dinner and it was the best yet. Go get you some at Liquor Barn Express on High St. It was cheap!! And, although this delicious wine didn't necessarily need it, you can spice up any wine with pomegranate. It's simply delicious finding those wine-soaked beads of goodness at the bottom of your glass. 



Shepherd's Pie

What you need for mashed potatoes:
4-6 Potaoes
3-6 tbsp light butter
1/4 c. milk
3 dollops of fat-free sour cream or greek yogurt
Salt & pepper to taste

For the meat filling:
1 lb of ground turkey meat (or beef)
1 Onion chopped
6-10 shakes of worcestershire sauce
Salt & pepper
1/3 c. low-fat sour cream
1/2 package of frozen peas or soy beans

1. Preheat oven to 350. 
2. Bring pot of water w/ salt to boil. (salt speeds up the boiling process)
3. While the water is cooking, sautee onions and olive oil in a skillet. 
4. Add ground turkey to skillet with onions.
5. Once water has started to boil, add 4-6 chopped potatoes and cook until tender.
6. As the meat cooks, add worcestershire sauce. Once meat has cooked, add sour cream and soy beans, salt & pepper.
7. Once potatoes are tender, strain water. Add butter, milk and sour cream to mash. Add salt & pepper to taste.
8. Something to note, 2Bit just cooks the meat in a skillet that can later bake in the oven. So, once the potatoes are mashed, smooth over the meat in the skillet and cook for 30 minutes. Sprinkling mozzarella or pepper jack cheese on top is optional.

2Bit sauteed some asparagus too. It's always great to add some more veggies.

  2. btw, this shepherd's pie recipe should be attributed to Mama Maple, who often made it all through my child hood and even still today. That and her meat loaf are some of my favs. Thank you for your many years of devoted cooking and care!! xoxoxox
